Black Bean and Corn Salad
While visiting some of our friends in McCall over Labor Day, we did allot of cooking at home and BBQ'ing. One of my favorite salads that my friend Rachael made was this Black bean and corn salad. It is seriously so yummy and flavorful.....and healthy! I made a batch of it this week, and I think I ate it for breakfast, lunch, and dinner.
Ingredients:
1 can black beans
1 can corn
1 red bell pepper
1 orange bell pepper
1/2 small red onion
1 avocado (optional)
1 lime (juiced)
2/3 cup red wine vinegar
1/2 cup vegetable oil
1/2 cup chopped cilantro (optional) I don't put this in because my daughter doesn't like it
salt to taste
In large bowl combine vinegar, oil, cilantro, lime, and salt. Then in a colander add can of beans and can of corn. Rinse them until the water runs clear. Add these ingredients to the large bowl with wet ingredients. Chop both peppers into small pieces (about the same size as beans), then add them to the bowl of beans and corn. Toss the veggies and beans all together. If you decide to add avocado I usually add this in my personal bowl at the end because avocados don't last very long and tend to get brown and mushy. Now you have the best new salad to add to your recipe book...enjoy... oh yes, and Thank You Rachael!
Goes great with tacos and a nice glass of your favorite white wine.
